Cheese Omelette

With the Rainy beautiful weather, we're all in the mood for a belly warming breakfast.I always enjoy rain with a cup of hot ginger tea sitting in the balcony. Having hot melting cheese omelette in this awesome rainy day  with a cup of hot tea makes it more beautiful. So,i  am sharing a very easy yet yummy recipe of cheese omelette.

Ingredients
Eggs 3
Red chilly powder  1/2 tsp
Pepper powder 1/2 tsp
Turmeric powder A pinch
Salt- According to your taste
Cheese slice -3 (Chopped)
Oil- 2 tbsp

Method

All you need to do is beat the eggs in a bowl adding all the dry ingredients. Beat it for at least for couple of minutes. Now heat oil in the pan ,once the pan is hot add the the beaten eggs .
As soon as you add the eggs add the chopped cheese.Let it cook for a minute or two. Turn it and let it cook for couple of minutes.

CHOCOLATE PAN CAKES

Ingredients

  • Eggs-2
  • All purpose flour-1 cup
  • Baking powder-1/2tsp
  • Baking soda-1/2tsp
  • Vanilla essence-1/3/tsp
  • Coco powder-1/3cup
  • Sugar-2tbsp or according to your taste
Method:
  • Beat eggs and sugar in a bowl  for 5 minute after this add baking powder,baking soda and vanilla essence.
  • Beat it for another 10 minutes .Now add coco powder  and all purpose flour and just mix it.
  • Keep it aside for 10 minutes.
  • Grease a pan with butter and cook this pan cakes for 1 minute each side.

Pepper Rasam / Rasam

Pepper Rasam

Ingredients :

  • Lemon size Tamarind- Soaked in warm water
  • Pepper Powder -1/2 tsp
  • Cumin Powder - 1/2 tsp
  • Turmeric powder-1/3tsp
  • Coriander Powder-1tsp
  • Red chilly-1/2tsp
Mix all these powder together and keep aside.
  • Curry leaves-10
  • Garlic-5 
Crush the garlic.
  •  Whole red chilly (whole)-5
  • Asafoetida/hing-a pinch  
  • Mustard seeds-1/3tsp
  • Cumin -1/3tsp
  • Urud dal-1/3tsp
  • Oil-1tbsp
  • Salt-To taste
  • Coriander leaves -For garnishing 

Method :

Heat oil in a pan in slow flame  ,once the oil is hot add the mustard seeds,urud dal,cumin curry leaves ,whole red chilly ,asafoetida and  garlic fry it well.
Then add the powder mixture to it.
Fry it and add tamarind  juice ,salt and water let it keep the flame at medium and let it boil.

After a boil keep it in slow medium and cook for 7 minute.

Nellai chicken fry /Thirunelveli Kozhi fry

Thirunelveli Kozhi fry



Ingredients:

  • Chicken- 250 g
  • Shallots / Small onion- 4 (chopped )
  • Cinnamon- 1 stick
  • Cloves-2
  • Fennel seeds- a pinch
  • Cumin seeds- a pinch
  • Curry leaves- few
  • Garlic- 5 Crushed with 4 pepper corn
  • Tomato- 1
  • Chilly powder- 1/2 tsp
  • Turmeric powder- 1/4 tsp
  • Coriander powder- 2 tsp
  • Pepper- 1/2 tsp
  • Sesame Oil -1tbsp
  • Salt- as required.

To grind:
  • Shallots / Small onion- 7
  • Garlic- 3
  • Fennel seeds- 1/2 tsp
  • Cumin seeds- 1/2tsp
Recipe:
  1. Grind Small onion, Garlic, Fennel seeds and Cumin seeds without using water.
  2. Marinate the Chicken in ground items for 1/2 an hour.
  3. Heat Oil in a pan. Add Cinnamon, Cloves, Fennel seeds, Cumin seeds, remaining Small onion, Curry leaves, Garlic and fry till Onion turns into light brown in color.
  4. Add Tomato and fry till it becomes soft.
  5. Then add Chili powder, Turmeric powder, Coriander powder and fry till the raw smell goes out.
  6. Add marinated chicken, a cup of Water and cover the pan with lid.
  7. Cook till the Chicken pieces are cooked.
  8. Finally add Pepper and Salt, cook for another 2 minutes.

Spicy Chettinad Crab Curry

Ingredients 


Crabs -300 gms cut the crabs in half and separate the legs as it will help the masala to get inside the crabs
Pepper corn -1/2 tsp
Fennel  seeds-1tsp
Kashmir  red chilly -3
Clove-1/2 tsp
Cumin-1/2 tsp
Shallots-10-12
Make a paste and marinate crabs in this paste for 30 minute

Salt -according to taste
Chilly  powder-1/2 tsp
 2 Onion paste
1 cup of grated coconut: make coconut paste
2 tomato paste
Curry leaves-10-15
Sesame oil -3 tsp
Ginger garlic paste-1 tbsp

  • Wash the crabs 3 times marinate with 1 lemon for 20 mints and wash again for 2-3 times this will  take away the fishy  smell .
  • In a earthen vessel  heat the oil  once the oil is hot slow down and add  the add mustard seeds, cumin seeds ,  half of the curry leaves and ginger garlic paste .
  • Fry it well now add onion paste fry for 2 minutes and add the crabs ,fry till the raw smell goes.
  • Once the raw smell is gone add the tomato paste again fry till the raw smell goes away.
  • Finally add the coconut paste mix well add chilly powder, remaining curry leaves and salt cook till 15 minutes or desire consistency .
  • Garnish with coriander leaves
  • Tips: good for people suffering from cold
  • The recipe will be spicy can adjust the spiciness according to your taste but I prefer the recipe to be spicy
  • Can be served with rice, parotha and roti

Apple Banana Pan Cakes

This Christmas season i am sharing very simple and yummy recipe yet delicious .Which can be enjoyed by everyone,Specially by children  and this is an awesome  pancakes which can be prepared with simple ingredients.
To be honest this is my first attempt on this pancakes and it came out very good.I prepared Swedish  danish  breakfast for my dad who  loved it.
All  you need for this recipe are:

  • Apple-1
  • Banana-1
  • Egg-2
  • Sugar-2tsp or according to your taste ,the  reason i did't add much because we are adding fruits and essences
  •  Rose essence-1tsp
  • Vanilla essence-1tsp
  • All purpose flour -1cup
  • Baking powder-1tsp
  • Butter for frying





First peel the apple and banana put  this  in jar add eggs,vanilla & rose essences and last but not the least sugar give it a nice blend and keep it aside.
In a big bowl add flour and  baking powder mix it well now add the blended mixture to this and mixit well and keep it aside for 15 minute.

Now add some butter in the pan in slow flame put this batter just place it like normal pancakes.
Cover with a lid let it cook for3-4 minute flip it and let the another side cook for 3-4 minute .
Remove it and garnish with some apple, banana and fresh cream .

Thakkali Chemmime Curry /Tomato shrimp curry/prawn curry

Ingredients:

    * Shrimp/prawns  - 500 gm
    * Onion paste - 4
    * Tomato paste - 2
    * Turmeric powder - 1 tsp
    * Chili powder - 2 tsp
    * Coriander powder - 2 tsp
    * Crushed Garlic  and Ginger - 4 tsp
    * Crushed Pepper corns - 1 tsp
    * Curry leaves
    * Salt -To taste

    *Coriander leave -For garnish


Method:

1.Take a pan heat the oil,add curry leaves,onion and fry it for few mins.Add ginger and garlic and fry it for another two mins.
2.Add tomatoes and fry it.
3.Take a little bowl add chili powder,turmeric powder,coriander powder,crushed pepper corns and make it as a paste.
4.Add this paste to the pan.Add shrimp,salt,and required water.Cover and cook on medium flame for 10 mins.
5.Remove the lid and cook for 2 mins.After 2 mins remove it from stove and serve hot.

6. Garnish with fresh coriander leaves 





Tips:

 Do not cook the shrimp more than 15 minutes as it will be rubbery.
To remove the fishy smell from the shrimp marinate it with  one whole lemon  and salt for 10 minute ts after first wash and then wash it again .
