Raw mango sambar

I just love summer season because of raw mango and dishes made out of raw mangoes which are spicy, tangy and yummy making my summer season delightful.

Sambar is the most frequently made dish at my house. I would ecstatically consummate a whole raw mango when integrated to the sambar  And when paired with a spicy potato  fry. Once the raw mango cooks in the sambar, it becomes exceptionally tender and super tasty.

Ingredients:-

Toor dal -1 cup
Coconut oil - 1tbsp
Fenugreek seeds - 1/2 tsp
Asafetida -  a pinch
Mustard seeds - 1/2 tsp
Cumin seeds - 12 tsp
Curry leaves - 10 leaves
Green chillies - 3
Onions - 2, chopped
Tomato - 1, roughly chopped
Tamarind - small lemon size, soaked in 1 bowl of lukewarm water. Utilize very less for this samber as mango is very tangy.
Chilly powder - 1tsp
Turmeric powder - 1/2 tsp
Sambar powder - 1tbsp
Salt - according to your taste
Raw mango - 2, chopped in 4
Coriander leaves - some for garnishing

Method:- 

Heat oil in a pressure cooker on medium flame, once oil is hot enough, add mustard seeds, cumin seeds, fenugreek seeds, asafetida, curry leaves and green chillies. Fry for a minute or two now add the chopped onions. As soon as the onion becomes translucent, put the chopped tomatoes and the dry spices, including the sambar powder cook till the tomato becomes tender.

If you visually perceive the spices, leaving oil that's the right time to add tamarind pulpy water, let it cook on the medium flame until it boils. Boiling of the tamarind water designates the impeccable stage to add the tour dal sprinkle salt according to your taste, give a good stir and close the cooker lid and cook for 3 - 4 whistle.

Open the lid of the cooker once the pressure is gone again place on medium  flame and add the mango pieces and some curry leaves. Cook the mango very meticulously as the gravy will be horrible if mangoes are overcooked, just cook the mangoes till tender.

At the terminus garnish with coriander leaves, personally I don't like it and accommodate with hot steamed boiled rice and spicy fried potatoes.
